Vegan Gumbo Recipe

Many years ago, I was a Food Service Specialist in the US Army. Working out in the field, I learned how to cook with very limited ingredients and throw something together last minute to create something tasty for the troops. This lead me to the love of comfort foods! One of my most favorite comfort foods is gumbo!

Transitioning to veganism has been challenging in the passion for comforting soups and stews. Traditionally, gumbo is made with butter, chicken, andouille sausage and crustations. Fortunately, there are many wonderful substitutes than replace the textures and flavors one would derive from these animal products.

this recipe is a melting pot of umame and love! As tradition, I made this up on the spot with ingredients I already had in the fridge and pantry, plus a stroll through the vegan isle at my local Wal-Mart.

Vegan Gumbo Ingredients List

List of vegetables for vegan gumbo:

2 cups celery, sliced

1/2 large sweet vidalia onion, diced

4oz sliced mushrooms

12oz okra, sliced

1 large sweet bell pepper, diced

2lbs roma tomatoes, purried

3 TBSP garlic, chopped

List of seasonings for vegan gumbo

2 TBSP Better than Bullion No Chicken Soup Base

1/2 tsp Better Than Bouillon Smoky Chipotle Base

2 EDWARD & SONS - NOT-FISH BOUILLON CUBES

1 tsp Great Value creole seasoning

List of meat alternatives for vegan gumbo:

1 pkg Daring Cajun Plant Chicken Pieces, Chopped

2 links Artisan Tofurky Meatless Cajun Style Andouille Sausage, sliced

1 pkg MAY WAH - VEGAN RED SPOT PRAWN, chopped
